The hay we use is "Foin de Crau," an AOC (controlled designation of origin) variety harvested in the Crau plains of southern France, near the Mediterranean. This region has an unusual ecosystem of steppe vegetation on land that was converted into natural prairies in the 16th century through the construction of a network of canals.
"Foin de Crau" hay for animal feed is cut at three times during the year, in May, July or September, depending on its intended use.
The hay used for perfumery is harvested in June and consists primarily of grass. It is cut while in bloom, windrowed and baled, and then distilled in France to produce an herbaceous absolute with the warm characteristic note of hay.
