A common sight in the Mediterranean basin, the carob is a persistent tree that grows to heights of 6 to 10 meters. Its fruits are long pods that contain a sweet starchy pulp with a slightly chocolate-like flavor. Carob seeds are processed to produce a gum used in the food industry as a thickener.
We cultivate carob trees in a 20-hectare orchard in Morocco, producing an extract from the pulp after separation of the seeds for food applications.
