The lentisk that we use is gathered in the forests of Morocco's northern Rif region, according to the terms of concessions granted by the Moroccan government. The plant, Pistacia lentiscus, is a persistent shrub related to the pistachio tree. It is also called the "mastic tree" after its resin, traditionally harvested in Greece for use in medicines and as a flavoring agent.
In Morocco we harvest only a few branches per plant, and the cut branches are processed to produce an absolute and an essential oil.
