Tarragon, a highly fragrant plant that originated in central Asia, is widely used as an aromatic herb in French cuisine. Its cultivation for perfumery is a tradition in Provence, where small plots of tarragon are grown for the production of the essential oil. The plant is harvested twice a year, in June and September. Its flowering tops are distilled directly in the harvest bins, using the same process as for lavandin.
